Introduction
Perched on the magnificent Jamison
Valley and overlooking the World Heritage Listed Blue
Mountains, Lilianfels is a renowned
haven of relaxation by it’s favoured guests.
This historic five star, European style country house, set
amidst two acres of English style gardens and just a short drive
from Sydney, is a breath-taking escape for romantics, a delight
for gourmets and a wonder for lovers of nature.
Following a multi-million dollar
refurbishment including expanded spa facilities, Lilianfels
truly upholds it’s multi-award winning status and reputation as
one of Australia’s most relaxed destinations. The 85 rooms
and suites are large, comfortable and welcoming. All are
decorated in a style reminiscent of the area’s Victorian
heritage with a contemporary flavor.
The historic home ‘Lilianfels’,
built in 1889, has been transformed to its original splendour and
now houses the award-winning Darley’s restaurant, named after
the original owner. The adjoining country house, opened in
1992, has been designed in line with the architecture of the
heritage home.
In addition to guest rooms,
Lilianfels features a spacious lounge with open fires, a reading
room, billiard room, fabulous indoor and outdoor heated swimming
pools, spa and health club facilities, a tennis court, mountain
bikes and Italian cuisine at the Tre Sorelle restaurant.
Surrounded by nature, Lilianfels
also sits adjacent to The Three Sisters in the World Heritage
Listed Blue Mountains National Park. The Three Sisters
symbolise the pride of the Blue Mountains with their towering
escarpments and awe-inspiring depths. |

At Lilianfels, you can be yourself whilst enjoying all the
creature comforts of an exclusive luxury retreat. From the
crispest sheets and fluffiest towels to the locally bottled
mountain spring water on turn down, no detail has been
overlooked.
Sink into their extra deep baths and luxuriate in the red wine
exfoliating treatment. The marble bathrooms offer separate bath
and shower, with each room featuring views over the English
style gardens, or the backdrop of Echo Point with its vast
mountains and plunging valleys.
Decorated in lush fabrics including organza with silk drapes,
lavish pink, green and lilac themed rooms predominate. The
sumptuous floral designs bring the outdoors in, inviting you to
curl up in a sofa and wile away the hours.

mountains.
Throughout the hotel these delightful rooms enjoy corner
positions in the hotel, giving guests partial valley views.

brings the walls to life, and fine porcelain ads to the rooms
charm With only 18 throughout the hotel they are at a premium.

The Spa Rooms and have their own Jacuzzi, making the Spa Room
popular for the romantic and honeymoon guest.
These popular rooms are located in both Entrance and Valley
View aspects of the hotel (two in each). These rooms have

The quaint pitched ceiling gives the room a distinction all
its own. – definitely a room with a difference.

Our Suites
Lilianfels has four suites, distinguished by their individual
character: 'Mini Mini Saddle', 'Cloudmaker', 'Kanangra' and
'Nellie's Glen'.

bathroom with spa bath. They both have an interconnecting room
available, so that it is possible to have a 2 - bedroom suite.

Lilianfels' distinctly seasoned climate means
the best of a wide variety of local produce is offered.
Lilianfels features two restaurants, the elegant Darley’s fine dining
restaurant boasting modern Australian cuisine and a more casual dining
option, Tre Sorelle (Three Sisters) restaurant.
Heritage listed Darley’s restaurant is also steeped in early Australian
history as the original homestead of Sir Frederick Darley, the sixth Chief
Justice of New South Wales. Over 114 years old Darley’s and the surrounding
gardens that make up Lilianfels was the mountain retreat for the Darley
family.
The crisp mountain air was believed to be curative for Sir Frederick's
daughter, Lilian who was ill with tuberculosis. Sadly, she passed away at
the early age of twenty-two years, but the name Lilianfels lives on in her
memory, ‘fels’ meaning high rocky ground.
In addition to the twenty-four hour room service, the lounge at Lilianfels
offers all day dining. Sip a cocktail at the stylish mahogany bar, sink
into the plush Victorian armchairs and curl up by the fire with a book, or
take afternoon tea in grand tradition to the relaxing strains of live
classical music.

Darleys
Darleys restaurant is notable for its consistent use of fresh regional
produce and finely crafted Modern Australian cuisine, courtesy of Executive
Chef Hugh Whitehouse. Enjoy tantalizingly authentic flavours and stylish
presentation, enhanced by prompt professional service amidst this romantic
setting.
Picturesque Darley’s Restaurant is heritage listed building, boasting
richly appointed fittings, stained glass windows, open fireplaces and
magnificent views of both the surrounding gardens and the Jamison
Valley.
Dine indoors or on Darley’s balcony which can be enclosed for
extended outdoor dining during the cooler months. Also available are
separate private dining rooms all beautifully decorated for those
special occasion events.
Talented Executive Chef Hugh Whitehouse has gained a coveted Sydney
Morning Herald ‘Chef’s Hat’ for five consecutive years in his role at
Milson’s Restaurant, Kirribilli. The menu features finely crafted
Modern Australian Cuisine which perfectly fuses taste, texture and
flavour. The focus is on slow cooked dishes, using the best local
produce and cleansing organic foods in keeping with the resort’s spa
philosophy. Mouth-watering highlights include dishes such as rare
roasted duck breast on a pressed duck confit with red Persian lentils
and figs. The menu’s stylish presentation is enhanced by prompt,
professional service and an enviable wine list.
Ties are not required
when dining in Darley’s. The restaurant is open five nights a week from
6:30pm onwards (Tuesday – Saturday) and is also open for leisurely
Sunday lunches.

Tre Sorelle
A more casual dining option, Tre Sorelle Restaurant specializes in classic
Italian cuisine and overlooks Lilianels' expansive gardens.
Tre Sorelle Restaurant is located in the main Country House overlooking
Lilianfels' delightful gardens.
Furnishings, like the menu in this restaurant are welcoming and casually
elegant. Offered is a classic Italian cuisine, with dishes such as pan
fried potato gnocchi with slow cooked duck and spinach.
The restaurant is open Friday to Monday from 6.30pm and reservations are
recommended. A delicious children's menu is also available. |

The Lounge invites guests to relax in plush
Victorian arm chairs, curl up by the fireplace with a book, or simply gaze
out over the spectacular views of the Jameson Valley. Afternoon tea is
